So, seeing all of this is like seeing a certain fulfilment, seeing many people from Tandil coming to taste the salami, to support a salami record. Well, all of that takes you back to that moment, inside the factory, you, your grandfather, your dad, and those beautiful stories, right?"

"To produce this longest salami in the world, which is a great challenge for us, we use around 1,500 kilograms of fresh meat, bacon, spices, everything that goes into the recipe for "Salame de Tandil," which is Tandil's designation of origin. And like any salami production process, once it's cased, the product shrinks, it loses water. At the moment we make it, that product is the salami; it may have a certain length, but over the days and weeks, it shrinks. So, we don't know how long it will be until the very last moment. In the end, it loses about 20 or 30%; it ends up being a salami of approximately 1,200 kg."

"Just as other countries have, for example, Champagne, in the Champagne region; Roquefort cheese in France; Salame de Tandil can only be called Salame de Tandil because it is made with raw materials from Tandil, it has a whole cultural and historical value behind it, and a certain protocol in terms of tying, the way it's tied, the recipe, as I told you, the proportions of lean meats, bacon, spices. What we achieve with this is for Tandil salami to be recognized both in Argentina and worldwide as a unique product."
